Gluten is the protein part of wheat, rye, barley and other related grains. Some people can't tolerate gluten in their gut, this condition is called Celiac disease.
In people with a gluten intolerance or gluten allergy, symptoms are varied, but do tend to respond by removing gluten from the diet.
I use Gram flour which is made from chick peas this is a very good alternative to wheat flour or I replace flour with almonds or polenta or I invent recipes that don't use flour at all!
